This pizza dough is a great option for anyone avoiding gluten but still wanting to enjoy homemade pizza. Buckwheat flour gives the crust a pleasant, slightly nutty flavor, while kefir and baking powder help create a soft texture without making the dough dry or crumbly.
For extra crunch, you can also add a tablespoon of ground flaxseeds or pumpkin seeds to the dough.
Both yeast and gluten may be problematic for some people following anti-Candida protocols. This dough contains neither.

In a large bowl, combine the kefir, olive oil, and a pinch of salt.

Add the buckwheat flour mixed with the baking powder and stir with a wooden spoon until you get a soft batter-like dough. The texture should be slightly thicker than cornbread batter. If the mixture feels too sticky, add a little more flour. If it becomes too dry, add a tablespoon of kefir.
The dough does not need resting time and can be used immediately.

Line a baking tray with parchment paper and spread the dough with a spoon to your desired thickness (about 0.5 cm / ¼ inch).
Preheat the oven to 200°C (390°F). Bake only the crust for about 10 minutes.
Remove the crust from the oven and add toppings of your choice.
Return to the oven and bake for another 10–15 minutes, until the edges become slightly crispy.

For this version, we used a small amount of natural ketchup and mozzarella as the base topping. After baking, we added fresh salad greens, broccoli pesto, and a few slices of beef prosciutto. Feel free to customize the toppings to your preference.
