A Light, Nutrient-Dense, Gluten-Free Meal for Tight Insulin Control and Metabolic Vitality
Hake is a highly digestible, exceptionally nourishing white fish that serves as an excellent addition to dietary protocols for diabetes and insulin resistance (IR) due to several key metabolic benefits:
Pat the hake fillets completely dry with paper towels. Season both sides generously with sea salt and freshly ground black pepper, then let them rest at room temperature for about 10 minutes.
In a shallow plate, combine your gluten-free flour (or millet flour) with the garlic powder.
Dredge each fillet thoroughly through the flour mixture, shaking off any excess.
Heat a little olive oil in a pan over medium heat. Fry the fillets for 3–4 minutes on each side, until golden brown and crispy.
In a separate medium saucepan, heat a splash of olive oil over medium-low heat. Add the minced fresh garlic and sauté for just 30–60 seconds until fragrant, being careful not to let it burn. Add your chopped fresh or frozen spinach to the pan. Sauté gently for about 10 minutes until the spinach wilts down and develops a rich flavor.
Thoroughly rinse your rice under running water until the water runs clear to remove excess starches. Add the rinsed rice directly into the pan with the sautéed spinach. Stir and toast the rice grains for 2 minutes to absorb the garlic oil. Pour in just enough water to barely submerge the rice and spinach mixture. Add a pinch of sea salt and pepper, cover with a tight-fitting lid, bring to a boil, and then immediately drop the heat to low. Simmer gently for 20–25 minutes until the rice is perfectly tender and has absorbed the savory liquid.

Fluff the aromatic spinach rice with a fork and spoon a generous bed onto your serving plates. Arrange the crispy, golden hake fillets beautifully on top or alongside the rice. Garnish with half a sweet roasted red pepper for a burst of color and micronutrients (optional).
Serve immediately while warm!
