A Traditional Balkan Winter Preserve
Garlic-marinated roasted peppers are a cornerstone of old Balkan winter food preservation traditions. In times when households carefully stored vegetables for the long winter months, every home had its own version of this recipe. Most often, thick, fleshy red peppers were roasted, peeled, and layered in jars with plenty of garlic and fresh parsley. These peppers were more than just food—they were a reason for family gatherings. Women would come together to roast and peel the peppers, while the rich aroma of roasting vegetables spread a sense of warmth and home.
What makes these garlic peppers so special is their simplicity: just a few ingredients, but an absolute explosion of flavor. This is a healthy winter preserve made without any artificial preservatives or additives, and thanks to the natural preparation method, the peppers retain a massive amount of their nutrients.

Wash the peppers thoroughly and dry them. Remove the stems and clean out the inner seeds.

Roast the peppers on a hot plate, a grill, or inside the oven. Once roasted, place them immediately into a covered container or bowl to steam. This allows them to soften, making them much easier to peel.


Once the peppers have cooled down enough to handle, carefully peel off the skin and remove any remaining seeds.

Slice the garlic cloves into thin slivers and finely chop the fresh parsley.

In clean, sterilized glass jars, layer the roasted peppers, then sprinkle a bit of garlic, salt and parsley on top. Repeat this process until the jar is tightly filled.
To finish, add the salt and a teaspoon of vinegar (if using) into each jar. Pour the cold-pressed oil over the top until the peppers are completely submerged and covered.
Seal the jars tightly with their lids and store them in a cool, dark place. Enjoy them all winter long!
