When following specific nutrition plans such as an anti-Candida diet, SIBO or IBS protocols, Hashimoto support, or blood sugar management for insulin resistance and diabetes, success often comes down to simplicity and high-quality ingredients. This meal offers a well-balanced combination of protein, healthy fats, and complex carbohydrates that are gentle on digestion and help support stable blood sugar levels.
Buckwheat: Although commonly referred to as a grain, buckwheat is actually a low-glycemic pseudo-grain rich in magnesium and fiber. It may help nourish beneficial gut bacteria, which can be especially important for individuals dealing with gut imbalance or dysbiosis.
Swiss chard and lemon: Leafy greens paired with vitamin C from lemon can support better iron absorption. They also provide a wide range of antioxidants and valuable nutrients that contribute to overall health.
Chicken: Chicken is an excellent source of high-quality protein and essential amino acids needed for tissue repair and immune support, while remaining relatively easy to digest.
Extra tip: If you are in a stricter phase of a SIBO protocol, adjust the amount of buckwheat according to your personal tolerance. Swiss chard and chicken are often well tolerated, but individual responses can vary.

Rinse the buckwheat thoroughly under cold running water before cooking. Add it to a pot with water in a 1:2 ratio (one cup of buckwheat to two cups of water) and add a pinch of salt. Bring to a boil, then reduce the heat, cover, and cook for about 10–12 minutes, or until the grains become tender and the water is absorbed. Remove from heat and let it rest for a few minutes. Finish with a drizzle of olive oil and some freshly chopped parsley.
Slice the chicken breast into fillets or cutlets. Lightly season with salt and brush with a small amount of olive oil. Heat a grill pan or regular skillet over medium heat and cook the chicken for 4–5 minutes per side, until golden on the outside and juicy on the inside. Avoid overcooking to keep the meat tender and moist.
Wash the Swiss chard thoroughly. Finely chop the thicker stems and roughly chop the leaves. Add the chard to a pot of boiling salted water and cook for 10–15 minutes — just enough for it to soften while keeping its vibrant green color and nutrients intact. Drain well and, while still warm, season generously with olive oil and fresh lemon juice.

Serve with young radishes or a fresh salad of your choice.
