Rinse the buckwheat groats thoroughly under running water. Place them in a pot with water (using a 1:2 ratio of buckwheat to water) and add a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 10–15 minutes until tender. Remove from heat and let it sit covered to absorb any remaining moisture.
Wash the nettle leaves carefully (it is highly recommended to wear gloves to avoid stings). Blanch the leaves in a pot of boiling water for 2–3 minutes, then drain immediately. Once cooled slightly, chop the nettle finely. Transfer to a bowl and season with extra virgin olive oil, fresh lemon juice, and salt to taste.
