In this modern remix, we are taking those comforting, traditional flavors and upgrading them for contemporary wellness. This homemade version is beautifully soft and crumbly, even though the recipe is completely free of traditional corn and wheat flour.

In a medium bowl, whisk the eggs, then pour in the yogurt (or kefir) and olive oil. Whisk thoroughly until the liquid base is completely smooth and combined.
Add the chickpea flour, baking powder, and a pinch of baking soda to the bowl. Stir well until you achieve a smooth, medium-thick batter.
Gently stir the low-fat curd cheese and dried oregano into the batter. (Pro-tip: If the mixture feels a bit too runny or thin, toss in one extra tablespoon of chickpea flour to adjust the density).

Preheat your oven to 200°C (390°F). Pour the batter into a greased baking pan or a pan lined with parchment paper. Smooth the top with a spatula and generously sprinkle with sesame seeds.
