Preparing the Dock Leaves
Wash the patience dock leaves thoroughly. Carefully trim or thin out the thicker veins at the base of the leaves using a knife, which will make the rolls easier to fold and shape.
This time, we did not blanch the leaves beforehand. Be extra gentle while rolling them to avoid tearing. Keep in mind that the rolls may need a slightly longer cooking time because of this.

Preparing the Filling
Heat the olive oil in a large skillet. Add the finely chopped onion and sauté over medium heat until soft and translucent, about 5–7 minutes.

Add the chopped garlic, ground beef, paprika, turmeric, salt, and black pepper. Cook for another 5–8 minutes, until the meat is fully cooked and tender.

Add the quinoa, previously rinsed well under running water several times.

Rolling the Stuffed Leaves
Place one patience dock leaf on a flat surface. Add one or two spoonfuls of filling onto the wider part of the leaf, depending on its size.

Fold the bottom part of the leaf over the filling, then fold in the sides toward the center and roll tightly away from yourself to form a neat roll.
Repeat the process until all the filling and leaves are used.

Cooking the Rolls
Place a few leftover patience dock leaves at the bottom of a deep pot.
Arrange the rolls carefully side by side in circular layers until the pot is filled.
Pour in enough water to completely cover the rolls.
Cover the pot and bring to a boil. Reduce the heat to low and simmer for about 30–40 minutes, until both the leaves and the meat become tender.
For a richer and more intense flavor, place the stuffed rolls in an oven preheated to 200°C (390°F) and bake for about 10 minutes before serving.
