  1. Thoroughly clean and rinse the mackerel under cold running water, then pat it dry with paper towels. Season generously with sea salt and black pepper. Drizzle a little fresh lemon juice and a teaspoon of olive oil inside and outside the fish. Let it marinate at room temperature for 10–15 minutes.

  1. Preheat your oven to 200°C (390°F).

    Lightly brush the mackerel with a tiny bit of olive oil. For a tender, juicy result and easy clean-up, place a few lemon slices and a sprig of fresh parsley inside the cavity of the fish, then wrap it loosely in a piece of parchment paper. Place the wrapped fish into a baking dish.

  1. While the fish is baking, prepare the side dish. Rinse your rice thoroughly. Place it in a small saucepan with double the amount of water (or follow package instructions) and a pinch of salt. Toss the green peas into the pot during the last 5–7 minutes of cooking so they become tender and vibrant green.
