  1. Heat a little olive oil in a pot and sauté the finely chopped onion until translucent. Add the chopped garlic and sauté briefly.

  1. Add the chopped carrot and celery, and sauté for a few more minutes.

  1. Add the zucchini, sliced into rounds or cubes.

  1. Pour in enough water to cover the vegetables and cook for 15–20 minutes until everything is soft.

  1. Remove from heat and blend into a smooth cream soup.

  1. Serve warm, drizzled with a little extra virgin olive oil on top.
