Place the rinsed marrow bones, onions, carrot, celery, parsley, salt, pepper and bay leaves into a large stockpot.

Fill the pot with water to the top. Bring it to a boil, then immediately reduce the heat to the lowest setting.
- Simmer the broth on low heat for at least 4–6 hours (the longer you cook it, the richer it will be in minerals and collagen; it can go up to 12 hours). During cooking, occasionally skim off any foam and excess fat that rises to the surface.
- At the end, strain the broth through a fine-mesh sieve and season with salt and black pepper to taste. Enjoy!
