Sarma is one of the most beloved traditional dishes in Serbian and Balkan cuisine. It consists of cabbage leaves stuffed with a savory filling, most commonly made with meat and grains, then slowly cooked until tender and full of rich flavor.
In Serbia, sarma is much more than just food — it is a dish connected with family gatherings, holidays, winter meals, and homemade cooking passed down through generations. Almost every household has its own version and small secrets for making the perfect sarma.

Prepare the Filling
In a deep pan, sauté the finely chopped onion until softened.
Add the garlic and ground meat, then cook over medium heat until the meat is nicely browned.

Once cooked, stir in the salt, black pepper, paprika, and rinsed quinoa.

Prepare the Cabbage Leaves and Roll the Sarma
Rinse the sauerkraut leaves well and trim off the thickest parts of the stems.
Place a spoonful of filling onto each cabbage leaf and roll tightly to form sarma rolls.
Arrange the rolls closely together in a pot so they stay compact during cooking.
Cover the final layer with additional cabbage leaves.

Cooking
Pour enough water into the pot to fully cover the cabbage rolls.
Cook over medium heat for about 90 minutes.
Some traditional versions include a flour-based roux near the end of cooking, but this recipe is prepared without it while still developing a deep and delicious flavor as it slowly cooks down.

Baking
Preheat the oven to 220°C (425°F).
Transfer the cooked cabbage rolls to the oven and bake for about 30 minutes, until lightly browned on top.
Serve warm with sour milk, kefir, or Greek yogurt.
