Collard Green Rolls with Quinoa

- Blanching the Collard Greens
Thoroughly wash the leaves and trim away any thick, woody stems at the base. Drop them into a pot of boiling water for 2–3 minutes until slightly softened. Immediately transfer them to a bowl of ice-cold water to halt the cooking process, preserving their vibrant green color and elasticity. Drain well and set aside.
- Preparing the Filling
Heat the olive oil in a pan over medium heat and sauté the finely chopped onion and garlic until translucent. Add the minced beef and spices (salt, pepper, turmeric, and red paprika), and stir-fry for 5–6 minutes. Finally, thoroughly rinse the quinoa under running water to remove its natural bitter coating, and fold it into the meat mixture. Remove from heat.
- Rolling the Collards
Place a small portion of the meat and quinoa filling near the base of each blanched leaf. Fold the sides inward and roll them up tightly into neat, mini-stuffed rolls. Arrange them snugly, seam-side down, into a medium saucepan or cooking pot.
- Simmering and Crisping
Pour enough water into the pot to just cover the rolls. Cover with a lid and simmer gently over low heat for 30–40 minutes, adding a splash of extra water during cooking if necessary. Meanwhile, preheat your oven to 200°C (390°F). Transfer the cooked rolls to a small baking dish and bake uncovered for about 10 minutes to lightly brown the tops.
- Serving
