  1. Soaking the Buckwheat

    Rinse the buckwheat well and cover it with water. 

  1. Leave it overnight or for a minimum of 8 hours at room temperature.

  1. Blending

    The next day, DO NOT throw away the soaking water (this is important for fermentation).

    Blend everything into a mixture similar to thick pancake batter.

    If needed, add a little more water, but do not overdo it because the bread will be soggy if the batter is too thin.

  1. Fermentation (ideally 24h, minimum 12h)

    • Add 2 tablespoons of chia seeds and mix well.
    • Cover with a cloth (not airtight).
    • Leave it in a warm place for 12–24 hours. You will see bubbles and notice a slightly sour smell - this is a sign that the fermentation is working.
    • If your room is cold, it can take longer (up to 36 hours).
  1. Baking

    • Add salt and extra seeds if you like.
    • Pour the mixture into a baking pan lined with parchment paper.
    • Bake at 180°C for about 45–60 minutes.

    Let it cool completely before slicing.
