Sprats are a small oily fish that is often overlooked in our diet, yet they are a true nutritional powerhouse. Ingredients

If using frozen fish, thaw briefly, rinse, and drain them thoroughly.
Coating

Season the fish with salt, then coat each sprat evenly in corn (millet) flour.

Preheat the oven to 250°C (480°F).

Line a baking sheet with parchment paper and lightly brush it with oil. Arrange the sprats in a single layer on the paper.

Place the baking sheet on the very bottom rack of the oven and bake for 5–8 minutes. Then, move the sheet to the top rack and bake for another 5–10 minutes, until they are golden brown and crispy.
Serving

They are best served hot, with a squeeze of fresh lemon juice and a large portion of salad. Enjoy!
